If i have a install of sarge that i am pretty happy with how it is working, would it be possible to just pull from the security updates? so that i am not pulling new testing packages all the time.

Thats a good question... I've recently setup a few Debian sarge boxes and the updates are just two many and usually end up causing problems at some point. There may be some way to only mark critical packages for upgrade although I'm not sure how. What I do is only update once every few months on those machines and that usually helps. Of course, this isn't all that good for security if the machines aren't protected behind a firewall of sometype.

The one postive thing is that sarge is due to freeze at somepoint soon I believe and then it will become stable sometime before the end of the year if all goes well. At that point of course, there will only be security updates to sarge. (just make sure your apt sources are set to "sarge" and not "testing")
